I've always wanted to game on a ultra wide gaming monitor to feel more immersive on racing/fps games. That would depend on the rest of specs as well as their price difference. buying a 144hz laptop that cannot run games at 144 fps is not a good option. Though if you're not sensitive to tearing I guess you could not really notice. YMMV. I'm looking online and I see tons of monitors from 100Hz to 144Hz. However 125 hz (if you are NOT using a gsync monitor) might be better than using 120hz or 144hz if you have the choice, at least if you are using vsync.
